11:30am – Texas Barbecue History and Culture Primer and Tour of Martin’s Place

12:15pm – Family-style Barbecue lunch from Martin’s Place

1:30pm – “All Barbecue is Local”: Regions of Southern Barbecue

2:30pm – Rubs and Marinades

3:30pm – Barbecue Smoke 101

4:30pm – Hog Preparation (for whole hog barbecue)

7:30pm – Dinner


Saturday, June 9th:

7:45am – Hog on the Pit

9:00am – Pork/Beef Anatomy Overview

10:30am – Cutting Room Demonstrations (Beef)

12:30pm – Lunch: Heavy Tasting (student-prepared meats)

1:30pm – Cutting Room Demonstrations (Pork)

4:30pm – Sauce Science

7:30pm – Whole-hog Barbecue Dinner (Savell Home)


Sunday, June 10th:

9:00am – Poultry Sessions

11:30am – Lunch

12:00pm – Adjourn
