Join Foodways Texas and the Meat Science Section of the Department of Animal Science at Texas A&M University for a two day workshop on the most iconic Texas barbecue cut, brisket. Pitmasters and meat scientists will take campers through the most minute details of mastering smoked brisket. Not only will attendees learn about anatomy and grading, but they will also have taste tests based on brisket grades and wood types. Camp concludes with a Pitmaster Panel in which iconic Texas pitmasters, both new to the business and those from multi-generational barbecue families, discuss the life of a pitmaster and stories from the pits. **The lottery drawing for 2018 Camp Brisket spots will take place on August 3, 2017. We’ll send lottery details and registration instructions to all members during the week of July 10, 2017. You must be a current member of Foodways Texas or become a member by July 9, 2017, in order to register for the 2018 lottery drawing.

While Barbecue Summer Camp takes a broad approach to barbecue cookery and culture in Texas and beyond, Camp Brisket focuses on that quintessential Texas smoked meat, the humble brisket, covering topics such as grades/types of beef, types of smokers, wrapping or not wrapping the brisket, and much more. Attendees will receive direction from professors in the Meat Science Section at Texas A&M, as well as hear from pitmasters from around the state of Texas regarding some of their basic techniques.
